    List of Ingredients


    • 3 eggs
    • 1 cup oil
    • 2 cups sugar
    • 1 tsp. vanilla
    • 2 cups washed, finely shredded unpared zucchini – well packed
    • 1-1/2 cups cake flour
    • 1 cup whole wheat flour
    • 1-1/2 cup wheat germ
    • 1 tsp. salt
    • 2 tsp. nutmeg
    • 1 tsp. baking soda
    • 1/2 cup chopped nuts


    Instructions


    1. In a bowl beat eggs, oil, sugar, vanilla and zucchini. Turn beaters on low and begin adding all remaining ingredients as you measure them. Stir in nuts last. Batter is quite thin. Line two 9”x5” glass loaf pans with buttered double wax paper. Pour 2/3 full and bake 1 hour at 325 degrees.
