    LENTIL AND WILD RICE PILAF

    List of Ingredients


    • 3 Tbsp. butter
    • 1 onion, diced
    • 1 clove garlic, minced
    • 1 tsp. curry
    • 1/2 cup wild rice
    • 1/2 cup orzo
    • 1 cup lentils
    • 3 cups chicken stock
    • salt and pepper


    Instructions


    1. In large saucepan, melt butter over medium heat; cook onion and garlic for 3-5 minutes or until tender and fragrant, but not browned. Stir in curry powder and cook for 1 minute. Stir in lentils, rice and orzo. Add stock; bring to boil. Cover, reduce heat and simmer gently for 35 to 45 minutes or until lentils and rice are tender and liquid is absorbed. Season with salt and pepper to taste. 6 servings.
