WILD RICE CASSEROLE

List of Ingredients
- 6 oz. wild rice, cooked
- 1 cup finely diced celery
- ½ cup minced onion
- 4 Tbsp. butter
- 1 can beef consommé or chicken broth
- ½ can water
- 1 small can mushrooms with juice
Instructions
- Sauté celery and onion in butter until tender or straw coloured. Drain cooked wild rice; combine all ingredients in a heavy pot and boil until moisture is absorbed (45 minutes or more or until preference of moisture content is reached. May be placed in a casserole and baked at 250 degrees for 20 minutes for drier rice.
