    PICNIC POTATO SALAD

    List of Ingredients


    • Salad dressing:
    • 1 1/2 cups mayonnaise
    • 3 Tbsp. sweet pickle juice
    • 1 Tbsp. prepared mustard
    • 2 tsp. salt
    • pinch of pepper
    • Salad:
    • 8 cups cubed cooked potatoes - about 10 medium to large
    • 1 1/2 cups thinly sliced celery
    • 1/2 cup chopped green onions
    • 4 hard cooked eggs, chopped
    • Optional:
    • 1/4 cup thinly sliced radishes
    • 1/4 cup chopped gherkins
    • 6 slices bacon, crisp-fried and chopped finely


    Instructions


    1. Pour dressing over vegetables and toss gently; season to taste. Chill at least 3 hours. Sprinkle with bacon before serving.
