PICNIC POTATO SALAD

List of Ingredients
- Salad dressing:
- 1 1/2 cups mayonnaise
- 3 Tbsp. sweet pickle juice
- 1 Tbsp. prepared mustard
- 2 tsp. salt
- pinch of pepper
- Salad:
- 8 cups cubed cooked potatoes - about 10 medium to large
- 1 1/2 cups thinly sliced celery
- 1/2 cup chopped green onions
- 4 hard cooked eggs, chopped
- Optional:
- 1/4 cup thinly sliced radishes
- 1/4 cup chopped gherkins
- 6 slices bacon, crisp-fried and chopped finely
Instructions
- Pour dressing over vegetables and toss gently; season to taste. Chill at least 3 hours. Sprinkle with bacon before serving.
