• 1/4 cup sugar
  
• juice of a large lemon
  
• 1 egg yolk
  
• 6 Tbsp. oil
  
• strawberries
  
• spinach
  






Instructions



1. Place spinach in salad bowl and top with berries; chill well. To make dressing: Put sugar in a medium bowl, , add lemon juice and whisk until dissolved. Add yolks and whisk until sugar is completely dissolved; add oil 1 Tbsp. at a time, whisking constantly until dressing is thick and creamy.
