    List of Ingredients


    • 2 cups red lentils
    • 2 slices side bacon, cut in pieces
    • 1 medium onion, chopped
    • 2 carrots, chopped
    • 1 celery stalk, chopped
    • 3 sprigs fresh parsley
    • 2 garlic cloves, minced
    • 1/4 Tbsp. pepper
    • 1-2 Tbsp. salt
    • 20 oz. can tomatoes
    • 2 Tbsp. wine vinegar
    • pinch of oregano


    Instructions


    1. Wash lentils and place in large pot with 8 cups water and next 7 ingredients. Simmer uncovered for 1 1/2 hours, then add salt, tomatoes, vinegar, and oregano. Taste for seasoning and serve when hot. Makes 8 generous servings.
