List of Ingredients
- 2 cups red lentils
- 2 slices side bacon, cut in pieces
- 1 medium onion, chopped
- 2 carrots, chopped
- 1 celery stalk, chopped
- 3 sprigs fresh parsley
- 2 garlic cloves, minced
- 1/4 Tbsp. pepper
- 1-2 Tbsp. salt
- 20 oz. can tomatoes
- 2 Tbsp. wine vinegar
- pinch of oregano
Instructions
- Wash lentils and place in large pot with 8 cups water and next 7 ingredients. Simmer uncovered for 1 1/2 hours, then add salt, tomatoes, vinegar, and oregano. Taste for seasoning and serve when hot. Makes 8 generous servings.
