- 4 Tbsp. goose or bacon fat
- 1 kg red cabbage, shredded
- nearly equal weight in apples
- 1 medium onion, chopped
- salt
- 1 bay leaf
- 2 whole cloves
- 4 juniper berries
- 2 – 4 Tbsp. vinegar
- flour to thicken, if necessary
- 2 – 3 Tbsp. cranberry or red currant jelly
- 1 cup red wine
Instructions
- Heat fat and fry onions and apples until golden brown; add cabbage. Stir continuously for 2 – 3 minutes. Add wine, then salt, bay leaf, cloves, and juniper berries. Cook until soft; if watery, use flour to thicken. Add vinegar and cook 2 to 3 minutes; add jelly and wine to taste.
