    BROWN BREAD

    Source of Recipe

    Mom-in-Law

    List of Ingredients

    • 3 cups rolled oats
    • 1 cup All-Bran
    • 1 Tbsp. salt
    • 2 Tbsp. shortening
    • 4-1/2 cups boiling water
    • 1 cup molasses
    • 1 Tbsp. dry yeast
    • flour

    Instructions

    1. Place all ingredients except yeast in a large bowl; pour boiling water over this, stir and allow to cool until lukewarm. Soak yeast in 1/2 cup lukewarm water while above mixture is cooling; add 12 cups all-purpose flour (until dough will take no more flour). Mix first half with a spoon, second half with hands. Cover the bowl and allow to rise (keeping warm) for 7 or 8 hours. Remove dough to floured board, cut off portions half the size of each tin, knead each and place in greased tins. Cover with tea cloth and let rise in a warm place for 1 hour. Bake in 350 oven about 1 hour.

    Final Comments

The recipe says to let rise for 7 or 8 hours. The original was made with yeast cake. The version made with active dry yeast takes only about 2-3 hours for each rising - or less if conditions are right.
