    Almond Empanaditas

    Recipe Introduction

    These cookies are traditionally served on Christmas Eve. A deep fat fryer is essential for preparing these.

    List of Ingredients

    2 cups all-purpose flour
    2 teaspoons baking powder
    1 teaspoons salt
    1/2 cup shortening
    1/2 to 2/3 cup ice water
    3/4 cup chopped almonds
    1/2 cup sugar
    1 teaspoon cinnamon
    1 egg white
    1/4 teaspoon almond extract
    1 cup powdered sugar

    Recipe

    Sift flour, baking powder and salt.
    Cut in shortening until mixture resembles crumbs.
    Add ice water, 1 tablespoon at a time, tossing with fork until all flour is moistened.
    Shape into ball and roll onto lightly floured surface to 1/8' thickness.
    Cut into 2 1/2" circles.
    Mix almonds, sugar and cinnamon.
    Beat egg white with almond extract until frothy.
    Stir in almond mixture.
    Place one teaspoon filling on each circle.
    Wet edges and seal with a fork.
    Fry in deep fat fyer at 400° until light brown, turning once.
    Drain and dredge while hot in powdered sugar.
