    Oatmeal Cookie Ice Cream Sandwich

    List of Ingredients




    3/4 cup vegetable shortening
    1 cup brown sugar, firmly packed
    1/2 cup sugar
    1 egg
    1/4 cup water
    1 t vanilla
    3 cups Quaker Oats (quick or old fashioned)
    1 cup flour
    1 t salt (optional)
    1/2 t baking soda
    2 T softened ice cream per cookie

    Recipe



    Preheat oven to 350 degrees.
    Beat together shortening, sugars, egg, water and vanilla until creamy.
    Add remaining ingredients.
    Mix well.
    Drop by rounded teaspoonsfuls onto greased cookie sheet.
    Flatten with bottom of 1/2 cup dry measuring cup dipping in granulated sugar.
    Bake 8-10 minutes or until light golden brown.
    Immediately remove from cookie sheet.
    Cool on wire rack.
    Spread with ice cream on bottom side of one cookie, top with second cookie.
    Wrap sandwich cookies with aluminum foil.
    Freeze.
    Remove from freezer a few minutes before serving.
    Makes 2 dozen sandwich cookies.

    Variation for cookies: Add nuts, chocolate chips, coconut, raisins or use your imagination.
