Mexican Bread Pudding (Capirotada)

Recipe Introduction
This is an authentic Mexican dessert especially served during Lent.
List of Ingredients
2 cups brown sugar
2 cups water
1 teaspoon cinnamon
1/2 teaspoon ground cloves
6-8 teaspoons butter
6 to 8 slices dried bread
1/4 pound pasteurized processed cheese spread, cubed
1/4 pound Longhorn cheese, cubed
1 cup raisinsRecipe
Mix brown sugar, water, cinnamon and cloves.
Bring to boil and cook until sugar dissolves.
Simmer 10 minutes.
Lightly butter bread and place in oven until butter melts.
Cut bread into 2" squares.
In baking dish, arrange layer of bread.
Place small cube of each cheese and a few raisins on each piece of bread.
Repeat until all bread is used.
Pour the brown sugar mixture over this.
Liquid should fill half the dish; if not, add more water.
Cover and bake at 350° until all juice is absorbed.
Serve with lemon custard, ice cream, lemon sherbet or whipped cream.
