Beef Enchiladas

List of Ingredients
1 lb. ground beef
1 med. chopped onion
8 oz. shredded cheddar cheese
Sauce
15 oz. can tomato sauce
2/3 c. water
1/3 c. chopped green onion
1 T. chili powder
1/2 tsp. dried Mexican oregano leaves
1/4 tsp. ground cumin
1 clove garlic, minced
Tortillas
1/2 c. water
1 pkg. of 6-inch tortillas
8 oz. shredded cheddar cheese
Recipe
Preheat oven to 350 degrees.
In a 10-inch skillet saute ground beef over medium heat until brown.
Remove from heat and drain.
Stir in onion and 8 oz. cheddar cheese.
Set aside.
In saucepan, combine sauce ingredients.
Heat to boiling, stirring occassionally.
Reduce heat; simmer uncovered for five minutes.
In a 10-inch skillet heat water to almost boiling.
Place one tortilla in water for 2 to 3 seconds.
Drain immediately.
Place on a plate and repeat with remaining tortillas.
Scoop approximately 1/4 c. meat mixture onto each tortilla.
Roll up and place in a 9x13-inch baking dish.
Ladle sauce over the enchiladas.
Sprinkle with remaining cheese.
Bake uncovered for 20 minutes or until bubbly.
