Rigatoni with Sausage Pepper Sauce

1 lb. Montalcino rigatoni
1/2 lb. hot Italian sausage, sliced
1/2 lb. sweet Italian sausage, sliced
1 green pepper, seeded, thinly sliced
1/4 cup red onion, sliced
1 clove garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
28 oz. can tomatoes, with juice
Parmesan cheese, grated
Recipe
Cook pasta according to package directions. Meanwhile, in a large frying pan, saut� sausages until browned.
Drain all but 1 tablespoon fat.
Add green pepper, onion, garlic and all spices.
Saut� until pepper and onion are tender (10 min.), stirring frequently.
Add tomatoes and liquid (break up tomatoes with fork.) Simmer to reduce liquid, about 5 minutes.
Spoon sauce over rigatoni and top with Parmesan cheese.
Serves 6 - 8.
