    Rigatoni with Sausage Pepper Sauce

    List of Ingredients

    1 lb. Montalcino rigatoni
    1/2 lb. hot Italian sausage, sliced
    1/2 lb. sweet Italian sausage, sliced
    1 green pepper, seeded, thinly sliced
    1/4 cup red onion, sliced
    1 clove garlic, minced
    1 teaspoon dried oregano
    1/2 teaspoon dried basil
    1/2 teaspoon thyme
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    28 oz. can tomatoes, with juice
    Parmesan cheese, grated


    Recipe

    Cook pasta according to package directions. Meanwhile, in a large frying pan, sauté sausages until browned.
    Drain all but 1 tablespoon fat.
    Add green pepper, onion, garlic and all spices.
    Sauté until pepper and onion are tender (10 min.), stirring frequently.
    Add tomatoes and liquid (break up tomatoes with fork.) Simmer to reduce liquid, about 5 minutes.
    Spoon sauce over rigatoni and top with Parmesan cheese.
    Serves 6 - 8.
