List of Ingredients
4 chicken breasts, skinned and boned
1 egg, slightly beaten
1/2 c. white wine
Parmesan cheese, grated
Bread crumbs
Sliced mushrooms
Green onions, chopped
4 slices Monterey Jack cheese
Olive oil
Recipe
Combine Parmesan cheese, egg and bread crumbs.
Dip chicken into egg mixture and brown in olive oil.
Place in baking dish and set aside.
In same skillet used for browning, saute mushrooms and onions in white wine.
Simmer 5 minutes.
Place a slice of Monterey Jack cheese on each chicken breast.
Spoon mushroom and onion mixture over the top.
Cover with foil and bake in a 350 degree oven for 20 to 25 minutes.
