Potato Dill Soup

Recipe Introduction
Not your ordinary cream based soup.
It's a delicious choice to begin a casual meal for family or friends.
List of Ingredients
1 1/2 red onion
3 large Idaho potatoes
3 Tbsp. vegetable oil
3 low-sodium chicken bouillon cubes
3 3/4 qt. water
3/4 tsp. salt
1/3 tsp. ground white pepper
1/3 tsp. fresh dillRecipe
Coarsely chop onion, peel and wash potatoes, then dice.
Heat oil in large saucepan over medium heat.
Saute onion until soft and translucent, about 3 minutes.
Add potatoes, chicken bouillon cubes, water, salt and white pepper.
Stir and bring to a boil, cover and simmer slowly over low heat until potatoes are tender, about 35 minutes.
Sprinkle fresh dill over soup and serve immediately.
Yields: 9 servings (1 1/4 cups each).
