Raw Vegetable Tray

List of Ingredients
Red and green pepper slices
Fresh mushrooms, halved
Ripe olives
Carrots, cut into sticks and blanched
Artichoke hearts
Tomato wedges
Marinade:
2/3 C. vinegar
2/3 C. olive oil
2 cloves garlic, minced
1/4 C. onion, chopped
1 t. sugar
1 t. dried basil, crushed
1 t. dried oregano
1 C. celery, finely chopped
1/4 t. pepperRecipe
In a saucepan, combine the marinade ingredients.
Bring to a boil; simmer uncovered for 10 minutes.
In a bowl, combine all vegetables except the tomatoes.
Pour hot marinade over the vegetables; stir to coat.
Chill for several hours, stirring occassionally.
Drain the vegetables.
Marinade the tomatoes for a few minutes.
Assemble on a tray.
