    4 pieces boneless chicken
    1/4 C.. dijon mustard
    1/2 to 1 C.. bread crumbs

    Preheat oven to 400°
    Brush the mustard onto both sides of chicken and roll each piece in the bread crumbs, coating thoroughly and gently shaking off the excess.Place in baking dish or cast-iron skillet sprayed with cooking spray. Bake for 20 minutes or until done.
    NOTE Chicken is very moist.
