    Melissa's Mashed Potatoes

    I have tried various mashed potato recipes, but this is my favorite one by far. I guess sometimes simple is best. This is more of a "pinch of this, dash of that" kind of recipe. I love it, because I can taste as I go along. When I served these at our Thanksgiving dinner, the pan was scraped clean, that's how yummy they are!


    List of Ingredients


    • Several pounds of red potatoes
    • Real butter
    • Evaporated milk OR half-and-half
    • salt and pepper to taste


    Instructions


    1. Boil the potatoes until they are tender. Drain, and keep the skins on.
    2. Using an electric mixer, begin to mash the potatoes. Add butter and evaporated milk as you go along. You want to make your potatoes taste rich and delicious, so be generous. Salt and pepper to taste as you go along. Keep some chunks of potato.
    3. When your potatoes are buttery and still a bit chunky, serve.

    Don't let the simplicity of this recipe put you off. These are simply wonderful.
