Potato Soup I
This is my sister's original recipe for potato soup. At first, when I read the recipe, I thought that it would be bland and watery. Boy, was I proved wrong! It is very cheesy with an excellent flavor! I highly recommend you try this soup. It tastes absolutely delicious with french bread, so I would suggest serving this with my French Bread Rolls, also found on this website. Happy eating!
List of Ingredients
- 1 cup onions, chopped
- 1 garlic clove, minced
- 3 tablespoons butter
- 4 large potatoes, cubed
- 2 tablespoons fresh parsley, chopped
- 4 cups chicken broth
- 2 cups shredded Cheddar cheese
- 1 can Cream of Chicken Soup
- salt and pepper to taste
- GARNISHES: 4 bacon slices, crisply cooked and crumbled; crushed croutons; green onions
Instructions
- Combine onions, garlic, and butter in a Dutch oven. Cook for five minutes. Blend in chicken broth, potatoes, parsley, salt and pepper to taste.
- Simmer, covered, for 20 minutes.
- Remove from heat. Mash potatoes with a potato masher. Stir in Cheddar cheese; heat thorough.
- Combine garnishes and sprinkle over individual bowls before serving.
YIELD: 6 servings
Final Comments
Served with a salad and crusty french bread or rolls with real butter, this is perfect comfort food on a cold winter's day.
