Vidalia Onion Casserole
This is a delicious onion casserole that goes great with any grilled dish. My sister made it for the Fourth of July, and everyone loved it. Be sure to use Vidalia onions; their natural sweetness is wonderful!
List of Ingredients
- 4 large Vidalia onions, quartered
- 7 tablespoons butter
- 3 eggs
- 1 (5-oz.) can evaporated milk
- 1 tube Ritz Crackers, crushed
- 1-1/2 cups grated Cheddar cheese
- salt and pepper to taste
Instructions
- Boil onions until tender; drain. Heat 4 tablespoons buttr in a skillet & saute the
onions.
- Beat the eggs & milk together. Add the onions, & 1/2 the cracker
crumbs, the cheese & salt and pepper to taste.
- Bake in a buttered casserole dish at 375
for 35 minutes.
- Melt remaining butter. Mix with cracker crumbs & top the
casserole. Bake 15 more minutes.
YIELD: 8 servings
