    Wanda's BEST BANANA BREAD

    I get a weekly message from Wanda's Happy Cooker site and she said that THIS was THE BEST ever Banana Bread she had ever tasted. Because I had other recipes which I could say were THE BEST too, I had to try it and find out for myself. Well, Wanda was right! This Banana Bread is SUCCULENT and MOIST!


    List of Ingredients


    • 1 3/4 cups all purpose Flour
    • 1 1/2 cups sugar
    • 1 Tsp baking soda
    • 1/2 Tsp salt
    • 2 Medium size ripe bananas, mashed with a fork
    • 2 eggs
    • 3/4 cup oil
    • 1/4 cup buttermilk
    • 1 Tsp vanilla
    • 1 cup chopped nuts, pecans or walnuts


    Instructions


    1. Heat oven at 325°. Prepare 9 x 5 pan with Pam spray.

    2. In a large bowl, whisk together flour, sugar, soda and salt. Set aside.

    3. In another bowl, mix together mashed bananas, eggs, oil, buttermilk and vanilla with a wire whisk until well blended.

    4. Gently combine both mixtures together with a wooden spoon, not overdoing it.

    5. Stir in chopped nuts gently.

    6. Pour into prepared pan and Bake at 325° for 1 hour and 15 minutes or until knife inserted in the center comes out clean. IF YOU USED MINI LOAF PANS, BAKE 50 minutes.

    7. Cool 15 minutes in pan and flip over on wire rack for complete cooling.



    Final Comments


    This can be doubled with very good succes. Freezes well too. Enjoy a moist slice plain or with butter. DELISH !
