Wanda's BEST BANANA BREAD

I get a weekly message from Wanda's Happy Cooker site and she said that THIS was THE BEST ever Banana Bread she had ever tasted. Because I had other recipes which I could say were THE BEST too, I had to try it and find out for myself. Well, Wanda was right! This Banana Bread is SUCCULENT and MOIST!
List of Ingredients
- 1 3/4 cups all purpose Flour
- 1 1/2 cups sugar
- 1 Tsp baking soda
- 1/2 Tsp salt
- 2 Medium size ripe bananas, mashed with a fork
- 2 eggs
- 3/4 cup oil
- 1/4 cup buttermilk
- 1 Tsp vanilla
- 1 cup chopped nuts, pecans or walnuts
Instructions
- Heat oven at 325°. Prepare 9 x 5 pan with Pam spray.
- In a large bowl, whisk together flour, sugar, soda and salt. Set aside.
- In another bowl, mix together mashed bananas, eggs, oil, buttermilk and vanilla with a wire whisk until well blended.
- Gently combine both mixtures together with a wooden spoon, not overdoing it.
- Stir in chopped nuts gently.
- Pour into prepared pan and Bake at 325° for 1 hour and 15 minutes or until knife inserted in the center comes out clean. IF YOU USED MINI LOAF PANS, BAKE 50 minutes.
- Cool 15 minutes in pan and flip over on wire rack for complete cooling.
Final Comments
This can be doubled with very good succes. Freezes well too. Enjoy a moist slice plain or with butter. DELISH !
