My Favorite Spicy Chili Con Carne

Recipe Introduction
I have made this Chili Con Carne recipe for close to 40 years and find it to be the best of any kind I have ever eaten in restaurants. I like spicy, so my spice measurements may be too much for some.
List of Ingredients
- 3 TBSP fat
- 1 large onion
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1.5 lbs ground beef ( I prefer ground turkey) or chopped beef
- 1 - 16 oz can (2 cups) cubed tomatoes
- 1 - 10 1/2 oz can tomato soup
- 1 lb can of red Kidney Beans - drained
- 1 can of Northern White beans - drained
- 1 small can of corn (optional) - drained
- 1 tsp Paprika
- 1 tsp Oregano
- 1-2 tsp Cumin
- 2-3 TBSP Chili Powder
- 1 tsp Cayenne Pepper
- 1 tsp salt
- 1 tsp ground pepper
- 1 clove garlic, finely chopped
Instructions
- Heat fat in large pot. Add onion, peppers and meat. Cook until brown, stirring occasionnally.
- Add all remaining ingredients.
- Cover and simmer 2-3 hours. Add a bit of water if too dry and thick.
Final Comments
If I find that this mixture seems too thick at the beginning, I might add a small can of tomato sauce and a bit of V8 juice to the mix.
Eat with crackers and shredded cheddar cheese.
