    Stuffed Acorn Squash

    An old Campbell Soup Recipe Book from the 1970's


    Recipe Introduction


    This dish served on a cold Autumn night is just so succulent. A great tasting "comfort" food type dinner.




    List of Ingredients


    • 2 Acorn Squash, cut in 1/2
    • Butter
    • Salt and Pepper to taste
    • 3/4 lbs. lean ground beef
    • 1/4 lb. bulk sausage
    • 1/2 cup finely chopped celery
    • 1/3 cup chopped onions
    • 10 1/2 oz. can Mushroom Soup
    • Buttered Bread Crumbs


    Instructions


    1. Wash and split squash. Remove seeds and fibres.
      Brush inside and edge generously with butter. Sprinkle with salt and pepper.
    2. Bake, cut side down, in baking dish at 400 degreesF for 35 minutes.....OR....
    3. Microwave in dish on High for 10-12 minutes (2 halves at a time), face up, with 3-4 Tablespoons water in dish, covered with Plastic Wrap.
    4. Meanwhile, in skillet, cook beef, sausage meat (extracted from the links), celery and onions until meat is browned and celery is tender. Stir in the Mushroom Soup.
    5. Fill squash with mixture. Top with buttered bread crumbs.
    6. Bake at 400 degrees F for 25-35 minutes or until squash is very tender.


    Final Comments


    Superb!!!!! Serves 4.
