Stuffed Acorn Squash

Recipe Introduction
This dish served on a cold Autumn night is just so succulent. A great tasting "comfort" food type dinner.
List of Ingredients
- 2 Acorn Squash, cut in 1/2
- Butter
- Salt and Pepper to taste
- 3/4 lbs. lean ground beef
- 1/4 lb. bulk sausage
- 1/2 cup finely chopped celery
- 1/3 cup chopped onions
- 10 1/2 oz. can Mushroom Soup
- Buttered Bread Crumbs
Instructions
- Wash and split squash. Remove seeds and fibres.
Brush inside and edge generously with butter. Sprinkle with salt and pepper.
- Bake, cut side down, in baking dish at 400 degreesF for 35 minutes.....OR....
- Microwave in dish on High for 10-12 minutes (2 halves at a time), face up, with 3-4 Tablespoons water in dish, covered with Plastic Wrap.
- Meanwhile, in skillet, cook beef, sausage meat (extracted from the links), celery and onions until meat is browned and celery is tender. Stir in the Mushroom Soup.
- Fill squash with mixture. Top with buttered bread crumbs.
- Bake at 400 degrees F for 25-35 minutes or until squash is very tender.
Final Comments
Superb!!!!! Serves 4.
