SPEKULATIUS (German Christmas Cookies)

Recipe Introduction
Our Saturday German school teacher, Mrs. Janette Dockery, had us bake these chewy spicy cookies and they were the best gingerbread type cookie dough I had ever had, although there is no ginger in these. Their consistency was just right for me, as I enjoy chewy.
Dip your cookie cutters in lots of flour so they don't stick to the dough.
List of Ingredients
- 1 cup sugar
- 2 eggs
- 1/2 cup butter
- 1 Tbsp Molasses
- 2 cups flour
- 1/2 cup ground Almond
- 1 tsp Baking powder
- 1/2 tsp vanilla
- 1/2 tsp almond extract
- 1 pinch of salt
- 1 tsp cinnamon
- 1 tsp allspice
- 1 tsp clove, ground
Instructions
- Beat until creamy the butter, sugar, eggs and molasses.
- Add remaining ingredients and mix well. Dough will be thick. You may want to refrigerate overnight.
- Later, using rolling pin, spread little portions of dough on a floured countertop. Cut out shapes with Christmas cookie cutters.
- Place on cookie sheets sprayed with Pam. Bake 8-10 minutes at 350°F.
- For a softer cookie, underbake. For crispy cookies, 10-12 minutes.
May be decorated with icing and sprinkles.
Final Comments
One recipe yields about 60 cookies. Freeze very well.
