White Chocolate Cranberry Brandy Cookies

Recipe Introduction
These make a lovely Christmas cookie, especially with a tinge of Brandy taste and red cranberry poking through.
List of Ingredients
- 1/2 cup butter or margarine
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 2 Tbsp Brandy
- 3/4 cup white chocolate chips
- 1 cup dried cranberries
- 1/2 cup crushed pecans or macademia nuts (optional)
Instructions
- Cream together the butter, sugars and the egg.
- Add dry ingredients and brandy. Stir well.
- Add white chocolate chips and cranberries (and nuts, which make a nice addition)
- Bake at 350°F 10-12 minutes.
- Best to take them out when they are still doughy.
- These cookies freeze extremely well.
Final Comments
Double batch yields approximately 72 cookies. I usually make 3 recipes at one time, using one bag of White Chocolate Chips and one whole bag of OceanSpray Cranberries only, and that's sufficient. Although the original recipe doesn't ask for salt, I add 1/2 tsp to my batch (3 recipes).
