    Did not yet try this recipe, but it sure sounds easy and tasty enough to have as a MUST TRY!


    List of Ingredients


    • 1 (4-serving size) Pkg lemon flavor gelatin
    • 2 cups boiling water
    • 12 large marshmallows
    • 1 cup crushed graham crackers
    • 1/2 stick (1/4 cup) melted butter
    • 1 pint of whipping cream (commercial whipped topping may be substituted)
    • 1 cup drained, crushed pineapple
    • 1 cup chopped nuts


    Instructions


    1. In a mixing bowl, stir the gelatin powder into the boiling water to dissolve. Add the marshmallows and stir until they melt. Refrigerate until gelatin is half-set, about 40 minutes.
    2. Meanwhile, mix together the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch square cake pan. Refrigerate.
    3. Whip the cream until stiff. Mix in the pineapple and nuts, then the half-set gelatin mixture. Spread onto the reserved crust and refrigerate until set.
    4. Makes 12 servings.

    Per Serving: 225 calories (55 percent from fat), 14.2 g fat (5.1 g saturated, 6.5 g monounsaturated), 23.8 mg cholesterol, 2.9 g protein, 23.7 carbohydrates, 1.4 g fiber, 116.5 mg sodium.
