Jell-O Icebox Cake

Did not yet try this recipe, but it sure sounds easy and tasty enough to have as a MUST TRY!
List of Ingredients
- 1 (4-serving size) Pkg lemon flavor gelatin
- 2 cups boiling water
- 12 large marshmallows
- 1 cup crushed graham crackers
- 1/2 stick (1/4 cup) melted butter
- 1 pint of whipping cream (commercial whipped topping may be substituted)
- 1 cup drained, crushed pineapple
- 1 cup chopped nuts
Instructions
- In a mixing bowl, stir the gelatin powder into the boiling water to dissolve. Add the marshmallows and stir until they melt. Refrigerate until gelatin is half-set, about 40 minutes.
- Meanwhile, mix together the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch square cake pan. Refrigerate.
- Whip the cream until stiff. Mix in the pineapple and nuts, then the half-set gelatin mixture. Spread onto the reserved crust and refrigerate until set.
- Makes 12 servings.
