Mint Squares

Recipe Introduction
Very tasty and creamy squares which I usually prepared for Christmas.
List of Ingredients
- 1/2 cup Butter
- 1/2 cup Sugar
- 1 Egg
- 1/4 cup Cocoa
- 1 3/4 cups Graham crumbs
- 1 cup Coconut
- 1/2 cup walnuts or pecans
- 1 tsp Vanilla
- ICING
- 1/4 cup creamed butter
- 2 cups icing sugar
- 3 TBSP. milk
- 2 TBSP of Instant Jello Vanilla Pudding
- 1 Tsp. Mint extract or Crème de Menthe liqueur
- 3-4 Bakers' semi-sweet Chocolate Squares
Instructions
- Mix first 4 ingredients in double-boiler and stir until it resembles a creamy milky texture.
- Add coconut and nuts, graham crumbs too, and mix well.
- Press in a greased 9 X 9 pan (or 12 X 8).
- Spread the icing on top.
- When that is firm, melt the Bakers' chocolate squares with 2 Tsp. butter.
- Spread over the icing.
- Refrigerate and cut in squares.
Final Comments
Succulent and quite appropriate for Christmas.
