    Recipe Introduction


    This Dessert wears its name well. It's like a fruit-filled cloud of light airy whipped cream. One could very well mistake the rhubarb for cherry as there is no bitter taste to it. Excellent job Mom.


    List of Ingredients


    • 4 cups rhubarb
    • 1 cup sugar
    • Graham Crust base (crumbs, sugar, butter for 9 X 13" pan)
    • 4 cups whipping cream (equivalent of 2 envelopes Dream Whip)
    • 2 cups of miniature marshmallows
    • 1 pkg of Jello Instant Vanilla Pudding


    Instructions


    1. Bring to a boil rhubarb and sugar, which you will thicken with 3 Tbsp diluted cornstarch. Cool mixture.
    2. Prepare a Graham Crust base (crumbs, sugar, butter) and spread in a pan 9” x 13”. Cover the base with the cooled rhubarb mixture.
    3. Whip 4 cups whipping cream (equivalent of 2 envelopes Dream Whip).
    4. To that mixture, incorporate 2 cups of miniature marshmallows.
    5. Spread that fluffy white mixture on top of the rhubarb.
    6. Prepare 1 pkg of Jello Instant Vanilla Pudding. Spread on top as final layer. Sprinkle with a few Graham Crumbs. Cover and refrigerate.
