Apple-Spice Hi-rise Muffins

List of Ingredients
- 3 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin spice or 1 tsp cinnamon,
- 1/2 tsp ginger
- 1/4 tsp each of nutmeg and allspice
- 1/2 tsp salt
- 1-1/2 cups brown sugar
- 2 eggs
- 1 cup buttermilk or plain yogurt
- 1/3 cup vegetable oil
- 3 apples, peeled and finely chopped
- 1 cup chopped nuts (optional)
Instructions
- Preheat oven to 400F. Grease 12 muffin cups or line with paper cups.
- Using a fork stir flour with baking powder, baking soda, spices, salt and sugar in a large mixing bowl.
- Whisk egg in a medium-size bowl with buttermilk and oil.
- Pour into flour mixture. Stir until just combined. Stir in apples and nuts.
- Spoon batter into muffin cups. Cups will be very full with batter heaped in middle. You may now sprinkle a mixture of sugar-cinnamon on top of each muffin before baking.
- Bake in center of preheated oven until golden and a cake tester inserted into middle comes out clean, about 15 to 17 minutes.
- Cool muffins in cups for 5 minutes, then turn out onto a cooling rack.
Final Comments
This recipe gave me 19 muffins made in the Jumbo-size paper cups. Very moist and tender.
