Mexican Stuffed Chicken

Recipe Introduction
This may take a while to prepare, but the end result is worth it all.
List of Ingredients
- 2 Chicken Breasts, skinned and deboned
- 1 TBSP dry bread crumbs
- 1 TBSP grated Parmesan Cheese
- 2 TBSP mild green chili, chopped
- 1/2 Tsp. chili powder
- 1 egg beaten
- 1 oz. Monterey Jack cheese, cut into 2 slices, approx. 3 X 1
Instructions
- Preheat oven at 375°.
- Pound chicken breasts with a hammer (cleaver) to about 1/4" thick.
- On each breast, place a TBSP of the chilis and a slice of Monterey Jack cheese.
- Roll up and place seam down in a greased baking dish.
- Brush with beaten egg.
- Mix together bread crumbs, parmesan cheese and chili powder, and sprinkle over chicken rolls, patting into place to form a crust.
- Bake about 20-25 minutes. Cheese inside will be melted and the crust nicely browned.
- Serves 2.

Simply delicious. Double or Triple as you wish, augmenting the ingredient portions accordingly.
