Recipe Introduction
Mom visited me one summer and prepared this awesome salad. Although the dressing may sound strange, it is truly what this salad needs for a topping. I have brought this salad to Church Pot Luck Dinners several times since, and everyone raved about it. You will not be disappointed.
List of Ingredients
- 1 lb. bean sprouts
- 10 oz. spinach, cut up
- 1/4 cup cooked rice
- 2 celery stalks, diced
- 1 green pepper, cut in strips
- 1 red pepper, cut in strips
- 1/2 cup sliced mushrooms
- 3 1/2 oz. toasted almonds, optional
- 3 1/2 oz. toasted almonds, optional
- 1 1/4 cups dried cranberries
- DRESSING
- 1/3 cup Mazola oil or Extra Virgin Olive Oil
- 2 TBSP Soya Sauce
- Salt and Pepper to taste
- 2 garlic cloves, finely chopped
Instructions
- Buy your bean sprouts at the last minute so they remain crunchy.
- Prepare dressing a few hours in advance to have all flavors well blended.
- Mix all ingredients, then add dressing just before serving.
Final Comments
I prepare this salad in my very largest stainless steel bowl because it's easier to toss all the ingredients together.
