    CREAM OF CELERY SOUP

    List of Ingredients


    • 1/4 cup butter
    • 2 cups thinly sliced celery (I used 2 big stalks)
    • 1/3 cup finely chopped onion
    • 2 cups chicken broth
    • 2 cups milk
    • 1/4 cup finely chopped celery leaves
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 tbsp sugar
    • 1/3 cup flour


    Instructions


    1. Melt butter or margarine in saucepan. Add celery and onion and cook five minutes or until tender. Remove from heat.

    2. Blend in flour. Add chicken broth and milk. Stir and cook until soup has thickened slightly.

    3. Stir in chopped celery leaves, sugar, salt and pepper. Simmer five minutes and serve hot.

    4. You can run through blender for a creamier texture. YUMMY ! ! ! !



    Final Comments


    Yield: one quart.
