CREAM OF CELERY SOUP

List of Ingredients
- 1/4 cup butter
- 2 cups thinly sliced celery (I used 2 big stalks)
- 1/3 cup finely chopped onion
- 2 cups chicken broth
- 2 cups milk
- 1/4 cup finely chopped celery leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tbsp sugar
- 1/3 cup flour
Instructions
- Melt butter or margarine in saucepan. Add celery and onion and cook five minutes or until tender. Remove from heat.
- Blend in flour. Add chicken broth and milk. Stir and cook until soup has thickened slightly.
- Stir in chopped celery leaves, sugar, salt and pepper. Simmer five minutes and serve hot.
- You can run through blender for a creamier texture. YUMMY ! ! ! !
Final Comments
Yield: one quart.
