Blueberry Streusel Muffins
List of Ingredients
1/4 cup butter, softened
1/3 cup sugar
1 egg
2 1/3 cups flour
3 t. baking powder
1/2 t. salt
1 cup milk
1 t. vanilla extract
1 1/2 cups blueberries
1/2 cup sugar
1/3 cup flour
1/2 t. ground cinnamon
1/4 cup butter, softened
Recipe
Preheat oven to 375 degrees. Cream 1/4 cup butter in mixer bowl; gradually add 1/3 cup sugar. Beat at medium speed until light and fluffy. Add egg, beating well. Combine 2 1/3 cups flour, baking powder, and salt. Add to creamed mixture alternately with milk, stirring well after each addition. Stir in vanilla; fold in blueberries. Spoon batter into greased muffin tins, filling 2/3 full. Combine 1/2 cup sugar, 1/3 cup flour and cinnamon in bowl. cut in 1/4 cup butter until mixture resembles crumbs. Sprinkle over muffin batter. Bake for 25 to 30 minutes or until golden brown.
