Impossible Pumpkin Pie

List of Ingredients




1 cup pumpkin -- canned, not pumpkin pie mix
1/2 cup baking mix -- Bisquick preferred
1 cup evaporated milk
1 tablespoon butter -- softened
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice***
1 teaspoon vanilla
2 eggs

***Can use 1 teaspoon EACH ground cinnamon, ground nutmeg and ground ginger instead of pumpkin pie spice.

Preheat oven to 350 degrees F. Spray a 9-inch pie plate with nonstick cooking spray.

Stir all ingredients together in a medium mixing bowl until blended.

Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 2 hours. Serve with whipped cream. Serves 8.
