    1 egg -- beaten
    1/3 cup milk
    1 1/2 cups flour
    1 tablespoon sugar
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/3 cup butter
    coarse salt, toasted sesame seed or poppy seed

    Preheat oven to 300 degrees F.

    In a small mixing bowl beat egg and milk. Set milk mixture aside. In a large mixing bowl, mix together flour, sugar, baking powder and 1/2 teaspoon salt. Cut in butter until coarse crumbs form. Make a well in the center of the flour mixture. Add the milk mixture all at once. Using a fork, stir till the mixture can be gathered into a ball.

    Turn dough onto a lightly floured surface. Knead dough gently by folding and pressing dough for 10 to 12 strokes or until nearly smooth. Roll dough into a 9-inch square. Brush off excess flour. Fold dough into thirds to form a 9 x 3-inch rectangle. Repeat rolling into a 9-inch square and folding in thirds three more times. Divide dough in half.

    Roll each half of the dough into a 12-inch square. Using a pastry wheel or sharp knife cut into 1 1/2-inch square. Place on ungreased baking sheet. Using the tines of a fork prick the crackers well. Lightly brush crackers with water. Sprinkle with coarse salt, toasted sesame seed or poppy seed.

    Bake 20 to 25 minutes or till done. Remove the crackers from the baking sheet and cool on a wire rack. Makes about 96.
