Roasted Red Bell Peppers

- 2 pounds peppers, sweet, red, raw, red or any other color desired
- 3 tablespoons extra virgin olive oil
- 2 cloves garlic, finely chopped
- salt and pepper to taste
Recipe
Preheat oven to 475 degrees F. Set peppers on a baking sheet and brush with 1 tablespoon olive oil to coat lightly. Bake, turning once or twice, for 20 minutes or until skins begin to blister.
Place peppers in a brown paper bag or plastic bag to steam for 10 minutes. Pull skins from peppers. Remove stems, seeds, and membranes. Tear peppers into 4 to 6 pieces each.
Lay roasted peppers flat on a serving plate. In a small bowl, combine remaining 2 tablespoons olive oil, garlic, and salt and pepper. Pour over roasted peppers.
