Jumbo Raisin Cookies
Source of Recipe
From my mom Shirley
List of Ingredients
2 cups raisins
1 cup water
4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup butter or shortening (for better flavor use 1/2 cup each)
1 3/4 cups sugar
2 eggs -- slightly beaten
1 teaspoon vanilla
1/2 cup nuts -- chopped
Bring raisins and water to a boil. Boil until raisins are plump, about 3
minutes. Set aside to cool. (Do not drain.) Sift flour with baking
powder, soda, salt and spices. Cream butter. Gradually blend in sugar,
creaming well after each addition. Add eggs and vanilla; mix well. Stir
in the raisins and any remaining water. Gradually add the flour mixture,
blending thoroughly after each addition. Stir in the nuts. Drop by
tablespoonfuls about 2-inches apart on greased cookie sheets.
Bake at 375 degrees F for 12 to 15 minutes. Makes about 3 1/2 dozen
cookies.
My mother, Shirley, used to make these as a special treat. They
are good!
