1 3/4 cups flour
3/4 cup sugar
2 tablespoons cocoa
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg
1/3 cup sour cream
1/4 cup corn oil -- or any cooking oil
2/3 cup milk
1/2 teaspoon vanilla
1/3 cup semisweet chocolate chips
1 tablespoon sugar
Recipe
Combine flour, sugar cocoa, baking powder, salt and baking soda in mixing bowl. Make an indentation in center. Beat together egg, sour cream, oil, milk and vanilla. Add to flour mixture and stir until blended. Stir in chocolate pieces. Spoon into about 18 paper-lined muffin cups. Sprinkle a little sugar onto the top of each. Microwave (High) 6 muffins at a time, uncovered, 2 to 2 1/2 minutes or until muffins are no longer doughy, rotating pan once if necessary. Remove muffins to serving plate, continue with remaining batter. Batter can be covered and refrigerated up to 5 days. To cook, spoon into muffin cups and increase cooking time to 2 1/4 to 2 3/4 minutes. Mini chocolate chips can be used.
