1 package Jiffy corn muffin mix
1/2 cup butter -- melted
8 ounces corn, cream-style
8 ounces corn -- drained
4 ounces sour cream
2 eggs
Pour butter and corn into 10 1/2 x 1 1/2-inch ungreased microwave safe quiche dish. Blend in sour cream. Beat eggs and stir in with corn muffin mix. Blend well. If desired sprinkle with a bit of paprika for color.
Microwave at 70% (medium) for 7 minutes. Rotate at 3 1/2 minute intervals, if needed.
Microwave at 100% (high) for 8 minutes. Test with toothpick. Remove from microwave and let stand a few minutes before serving. Serve warm.
