Banana Cake

Good with a fluff of sweetened whipped cream on the side.
List of Ingredients
1/2 cup shortening -- softened
2 large Eggs
1/4 teaspoon baking powder
1 teaspoon salt
1 cup banana -- about 3, mashed
1 1/2 cups sugar
2 1/4 cups cake flour
3/4 teaspoon baking soda
3/4 cup buttermilk
1/2 cup chopped nuts -- optional
Cream shortening and sugar until fluffy. Add eggs and beat in thoroughly. Add cake flour, baking powder, baking soda and salt, stirring in alternately with mashed banana and buttermilk. Add chopped nuts, if desired. Makes 2) 9-inch layers or a 9 x 13-inch cake. For layer cake, use whipped cream and sliced bananas for filling and cover cake with more whipped cream, after the cake has cooled. Place slices of banana upright around outer edge. Refrigerate any remaining cake.
