    Cashew Tuna Luncheon

    3 ounces chow mein noodles
    10 3/4 ounces cream of mushroom soup, condensed
    1/4 cup water
    6 ounces tuna -- 1 can
    1/4 cup cashews -- unsalted or salted
    1 cup celery -- finely chopped
    1 tablespoon green bell pepper -- chopped
    1/4 cup onion -- minced
    1/8 teaspoon salt -- if using unsalted cashews
    1/8 teaspoon pepper -- optional

    Preheat oven to 325 degrees F. Spray a 1 1/2-quart casserole dish with nonstick cooking spray. Combine all the ingredients EXCEPT 1/2 cup chow mein noodles. Sprinkle reserved noodles over top.

    Bake, uncovered, 40 minutes.

    Serves 5.
