Ham Potato Frittata

2 pieces green onions -- sliced
2 tablespoons green pepper -- chopped
1 tablespoon margarine
2 cups potato -- shredded
4 eggs
2 tablespoons water
1/4 teaspoon salt
1 cup ham -- cubed
2 tablespoons Parmesan cheese -- grated
Recipe
Combine green onions, green pepper, and margarine in 9-inch pie plate.
Microwave high 1 1/2 to 2 minutes or until tender crisp. Add shredded
potatoes; mix lightly. Cover with Saran wrap. Microwave high 5 to 6
minutes or until heated through, stirring once. Beat together eggs,
water and salt; pour over potaotes. Sprinkle with ham. Cover with Saran
wrap. Microwave High 4 to 5 minutes or until edges are set. Gently move
cooked portion to center.Sprinkle with Parmesan chees and cover.
Microwave High 1 to 2 minutes or until center is just about set.Let
stand covered about 5 minutes before serving. Serves 4.
