Quiche Lorraine au Fromage

Foolproof Pie Crust
1/4 pound butter
1 cup flour
1/4 teaspoon salt
Quiche
1 cup Swiss cheese -- grated
4 eggs
1 1/2 cups whole milk -- or light cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
2 tablespoons butter -- cut into dots
Preheat oven to 400 degrees F.
Foolproof Pie Crust:
Cut flour and salt into butter and mix until a ball forms. Pat dough with hands into a 9-inch pie plate, mending if necessary and fluting edge if desired. Prick generously with a fork and bake at 400 degrees F for 7 minutes.
Lower oven temperature to 375 degrees F.
Quiche:
Spread cheese and/or optional variations in Foolproof Pie Crust. Lightly beat eggs and milk (or light cream). Add salt, pepper and nutmeg and pour into pie crust. Distribute butter dots over top. Bake in preheated oven 35 to 40 minutes or until a knife inserted in center comes out clean. Allow to stand 10 minutes before cutting. Serves 4 to 6.
NOTES : Variations:
1 onion, sliced and sauteed
1/4 pound sliced, sauteed mushrooms
4 to 6 slices crisp, cooked bacon
8 ounces small, cooked shrimp
7 ounces crab meat, flaked
1 package drained, chopped spinach
