    1 1/4 cups flour -- or 1 1/2 cups cake
    flour
    1 cup sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    3/4 cup milk
    1/3 cup shortening
    1 large egg
    1 teaspoon vanilla

    Recipe



    Preheat oven to 350 degrees F.

    Grease and flour an 8 x 8 or 9 x 9 square baking pan.

    Measure all ingredients into a large mixing bowl and beat 1/2 minute
    on low speed, scraping the bowl constantly.

    Beat 3 minutes on high speed, scraping bowl occasionally.

    Pour batter into prepared pan.

    Bake 35 to 40 minutes.

    Serve with Old-Fashioned Lemon Sauce, Vanilla or Nutmeg sauce or
    Butter Sauce.

    The can also be frosted with favorite frosting and served as a cake.

    Vanilla Sauce with variations (Cottage Pudding sauce)

    1 cup sugar
    2 tablespoons cornstarch
    2 cups boiling water
    1/4 cup butter
    2 teaspoons vanilla

    Combine sugar and cornstarch in saucepan. Add boiling water. Bring
    mixture to a boil, stirring constantly, boil 1 minute. Add butter and
    vanilla.

    Keep hot until serving. Serve with Cottage Pudding.
