Nothing beats an Ugly Duckling Cake!

List of Ingredients

2 cups yellow cake mix -- 1/2 (2 layer cake mix)
8 3/4 ounces fruit cocktail -- undrained
1/2 cup coconut -- flaked
1 egg
1/4 cup packed brown sugar
1/4 cup butter
1/4 cup evaporated milk
1/4 cup sugar
3/4 cup coconut -- flaked




Recipe

Combine cake mix, fruit cocktail, 1/2 cup coconut and egg in mixing bow. Blend at low speed until moistened. Beat at medium speed 2 minutes, occasionally scraping sides of bowl.

Grease bottom only of 8-inch square glass baking dish. Spoon batter into dish. Sprinkle evenly with brown sugar.

Microwave on High, uncovered, 6 to 7 minutes or until top is no longer doughy, rotating dish once.

Combine butter, milk and sugar in 4-cup microwave-safe glass measuring cup.

Microwave on High, uncovered, 1 1/2 to 2 minutes or until mixture boils, stirring once. Stir. Then microwave on High 2 minutes. Add coconut and pour over cake. Makes 1) 8-inch cake
