Carrot Rice

List of Ingredients
1 cup rice -- uncooked
2 cups chicken broth
1/2 tsp salt
1/4 tsp pepper
2 Tbl butter
3/4 cup carrot -- shredded
1/2 cup onion -- choppedRecipe
In a large saucepan, combine rice, chicken broth, salt and pepper. Bring to a boil. Stir rice and reduce heat to Low. Cover and simmer for 15 minutes, until rice is tender. Melt butter in a skillet. Cook carrots and onion in butter over medium heat until tender but not brown. Stir rice into skillet and stir gently to combine with carrots. To freeze: Cool and place in freezer bag. Label and freeze.
To serve: Heat rice, fluff with a fork and serve.
