Apple Tart Tatin

2 tablespoons butter
1/2 cup brown sugar, packed
3 pounds apples -- cut into eighths, pared
8 3/4 ounces frozen puff pastry sheet -- 1/2 package, thawed
Preheat oven to 400 degrees F.
Heat butter and brown sugar in 10-inch oven proof skillet over medium-heat, stirring constantly, until melted. Stir in apples. Cook 20 to 25 minutes, stirring frequently, until syrup thickens; remove from heat.
Roll pastry into 10 1/2-inch square on lightly floured surface. Cut into 10 1/2-inch circle. Fold pastry into fourths; cut slits to allow steam to escape; and place over apples and unfold. Carefully tuck edge down around apples. Bake 15 to 20 minutes or until pastry is golden brown. Let stand 5 minutes before inverting onto heatproof plate. Serve with sweetened whipped cream, optional.
