Italian Pepper Steak

List of Ingredients
1 medium green bell pepper -- sliced
1 medium red bell pepper -- sliced
1 medium onion -- chopped, 1/2 cup
2 cloves minced garlic
1 tablespoon corn oil
3/4 pound top sirloin steak -- 1/2-inch thick
salt
3/4 cup beef broth
1/2 teaspoon dried oregano -- or dried basil, crushed
2 medium tomatoes -- seeded and chopped
In a large skillet cook bell peppers, onion and garlic in hot oil about 4 minutes or until crisp-tender. Remove from skillet and keep warm.
Place meat in the same skillet, adding more corn oil if needed, and season with salt. Cook over medium-high heat for 4 minutes on each side or until slightly pink in center. Transfer to a serving platter and keep warm. Reserve meat drippings.
Add beef broth and oregano or basil to reserved meat drippings in skillet. Bring to a boil. Boil gently, uncovered, over medium heat for 2 to 3 minutes or until broth is reduced to 1/3 cup, scraping up brown bits in pan. Remove pan from heat. Add the cooked vegetables and tomatoes. Heat through. Spoon over meat. Serves 4.
