Another excellent noodle recipe.
List of Ingredients
2 egg yolks
1 teaspoon soft butter
2 tablespoons light cream -- or half and half
1/4 teaspoon salt
1/4 teaspoon baking powder
3/4 cup flour -- up to 1 1/4 cups total
In a medium bowl, beat egg yolks. Add butter and cream; mix thoroughly. Add salt and baking powder and enough flour to make a soft dough which is not sticky; one that can be rolled out. Turn dough out onto lightly floured board or pastry cloth and roll out until it is very thin. Lightly fold rolled dough into flat, 3-inch wide turns. Use a sharp knife to cut folded dough crosswise into 1/8-inch wide strips. Noodles maybe cooked immediately or packaged in plastic bags and stored in the freezer up to 3 months. At cooking time, sift a very light dusting of flour over noodles before adding to boiling broth. Cook 10 minutes or until noodles are tender. Serves 4.
