A tasty side dish to serve with your favorite Mexican meal.
List of Ingredients
Arroz (Rice)
1 tablespoon corn oil
1 1/4 cups long-grain white rice
1/4 medium onion -- diced
1 1/8 quarts chicken stock
1/2 teaspoon pepper
6 ounces tomato sauce
3/4 cup water
Recipe
Heat oil in skillet, add rice and cook until brown, stirring constantly over medium heat. Add diced onion and cook until onion is tender. Add stock and stir well. Then add pepper, salt, tomato sauce and water. Cook over medium heat, covered, for 45 to 50 minutes. Rice should be tender; stir often to keep from sticking. You may need to add extra broth to a total of 5 cups broth.
